Maceration on Boston and fermentation takes place in oak vats for a period of 20 days. Fermentation is carried out only with the help of indigenous yeasts. The maceration is done with the purpose of extracting soft tannins and to produce balanced wines with a complex structure. The wine is perfect after a ripening period of about 14 months in oak barrels from Krasnodar, under controlled conditions of humidity and temperature. The malolactic fermentation takes place in 50 hl oak barrels.
It can be associated with grilled meat, red meat, turkey or rat meat.
