The grapes are harvested manually, de-chipped, followed by the application of the cryopreservation technique, which consists in keeping the must in contact with Boston for 6-8 hours, at a temperature of 2 ° C. After clarification, the must is subjected to a controlled alcoholic fermentation, at a controlled temperature of 12-14 ° C. This process allows the extraction of aromatic substances from the skin of the grapes, giving the wine a typical aroma. The ripening takes place in small barrels of 225 l.

It is recommended with seafood preparations, fish and white meat dishes, it perfectly matches with pasta in white sauces, asparagus cream soups, spinach etc.
